BASIL MARINATED GRILLED CHICKEN

1 Tablespoon Olive Oil
1 Tablespoon Red Wine Vinegar
1 Tablespoon Chopped Basil Leaves
1 Tablespoon Chopped Red Onion
2 Teaspoons Salt
1 Teaspoon Whole Black Peppercorns
1 Clove Garlic, Chopped
4 Boneless Chicken Breast Halves
4 Springs Basil for Garnish



1. Whisk together the oil, vinegar, basil, onion,
salt, peppercorns and
garlic in a bowl.
2. Once well combined, transfer the marinade to a
gallon-sized resealable
plastic bag.
3. Add the chicken and shake to combine well.
4. Refrigerate for at least three hours, and up
to twelve hours.
5. When ready to cook, preheat grill (inside or
outside).
6. Grill chicken until cooked thoroughly.
7. Remove from heat, garnish with basil sprigs
and serve.
