Creamy Spinach Pasta

Like its cousin, fettucine Alfredo, this warm dish is rich - but it sure makes it easier to get children to eat their vegetables. INGREDIENTS:
3/4 cup butter
1 clove garlic, minced
3 tbsp. chopped onion
3/4 lb. fresh or frozen spinach, drained and coarsely chopped
1 lb. green or white fettucine noodles
1-1/2 cups grated Parmesan cheese
1 cup heavy cream
Pepper

1. In a medium-sized skillet, melt half the butter and add the garlic and onion. Cook until golden but not browned. Add the spinach and partially cover the pan until the spinach had heated through.

2. Meanwhile, cook the noodles according to the package directions. Drain the pasta and return it to the pot. Toss it with the remaining butter, the spinach mixture, cheese, and cream until all are blended and heated through.Makes 6 servings.
